stick a brisket in a brine solution 5-10 days. there are lots of recipes online with subtle changes of the spices added and days to brine it -- nm

the pink salt is a must. it stops the meat from turning brown when it's cooked. there are almost no other uses for it beyond CB brining. -- nm
