In response to "I'm sure I'll have more questions as we get closer to the trip about what I need to get around and get from Newark (seem straightforward)" by oblique

Ty will be helpful in giving you info about getting to NYC from Newark. I don't leave the city by plane. :-)

For riding the subway here you'll need a Metrocard, there's another option I'll explain later, which can be purchased in any subway station from a machine. There are a lot of options on how much to put on the card with a bonus given for certain amounts.
Normally I'd suggest a weekly unlimited card so you can hop on and off the subway all day and as many times as you want for a flat fee. But I'm not sure if that's the most economical option if you're only here for a couple of days.
Might just be best to put $20 or so on a card for each of you this trip, especially if you think you'll end up walking to places more than riding the subway.

So, the other option is a tap and go one called OMNY. I believe you need to setup an account but it allows you to just tap a credit card or your phone to pay for the subway. There aren't any bonuses attached to it like you get when you buy a Metrocard at a machine. You just tap at the turnstile, pay the full fare and you're on your way.
