SAUSAGE TORTELLINI SOUP

Ingredients
1 tablespoon extra virgin olive oil
2 pounds ground Italian sausage
1 red onion, chopped (approximately 1½ cups)
3 garlic cloves, minced (approximately 1½ teaspoons)
1 large carrot, diced (approximately 1 cup)
1 cup celery, diced
1 can (14.5 ounces) diced tomatoes, drained
4 cups chicken stock
2 cups heavy cream
2 teaspoons Italian seasoning
1 teaspoon salt
½ teaspoon pepper
½ cup parmesan cheese, shredded
3 tablespoons cornstarch
3 tablespoons water
5 ounces fresh spinach, chopped
1 package (20 ounces) cheese tortellini

Instructions
1. In a large skillet, over medium heat, add oil.
2. Once hot, add ground sausage and cook until browned, breaking it up in the pan as you go
(about 5 minutes). Drain grease.
3. Add the sausage to the crockpot and top with onion, garlic, carrots, celery, tomatoes, chicken
stock, heavy cream, Italian seasoning, salt, pepper, and parmesan cheese.
4. In a small bowl, mix together cornstarch and water. Mix into the soup. Cook 3-4 hours on low.
5. When ready, add the spinach and the tortellini and cook for 7-8 minutes, or until cooked
through and the spinach is wilted. Serve immediately.
