i know you've worked catering jobs, probably where alcohol is served. here in texas there is a short certification coarse everyone serving has to take. it is the responsibility of the person serving to make sure that they don't get people *too* drunk. if they're over the limit they have to be cut off and you have to get them out of the bar immediately.
