You gotta bruise the hell out of it, which releases some sugars. Then chop it thin and use a dressing with some fruit in it, raspberry or strawberry are good choices. Walnuts or pecans if you've got em.
It's also good as an add in to a tomato sauce, where it mostly melts away and adds thickness.
