My favorite are a simple cookie called Savoiardi which are called Lady Fingers in English but aren't like what most people think of when they think of Lady Fingers. No almond in them though so they won't work for your needs this time but grab some anyone just to enjoy. :-)
Savoiardi are flat and wide with a wonderful vanilla flavor. Crunchy on the outside with a chewy and very tasty inside.
Most people don't get them when they get Italian cookies as they're not pretty looking, they're a plain cookie to be honest, and often are only really included when you tell them to give you a pound or two of mixed cookies. Most go for the cookies with sprinkles which are awesome but for me the savoiardi are the best.
