I think I also need to avoid copy/paste because each sheet is hundreds of rows of data which continue to be updated.

Unless copy/paste somehow works for Excel's Tables.
As a test I did format the data as tables, and was successfully able to formulate:
=Sheet1!A2:A5&Sheet2!A2:A5 which concatenates the values into the destination cell rather than stacking the values, so I don't see why I'd be running into an error other than I'm simply too dim to figure out the right syntax to stack.
