For fun I looked through the FAQs. Highlights include cannot board if 22 weeks pregnant. Legal drinking age is 21 on board, local law on shore.

Younglings have to be at least 1 years old to board. You can disembark and return to the ship at a later port, but it's on you obviously to get to that destination.
Major holidays will be celebrated, but if you're religious, you better plan to hold your own ceremonies for Jewish or Muslim, etc ones.
Prescriptions need to be brought from the start. Would be interesting to see how insurance might cover such an exception since generally you can only get 90 day supplies.
