We help stock/maintain our local free fridges (we have 9 now!). To reduce food waste, some companies give food that's close to expiry. We got 400 lbs

of tofu, expiring next week. In 6 lb packs. We took 12 lbs to start, make 22 lbs of vegan lo mein, put those back in the fridge as 26 containers full. We've got another 12 lbs that we're making into taco kits.

I appreciate the donation, but it also filled so many fridges full that you couldn't get useful food in. The community has been good about pulling raw materials out and returning as meals.

We got 3oo lbs of potatoes a few weeks back as well.

Any other good tofu dishes we should make?
