Okay, Victoria & Albert's at the Grand Floridian would be a suggestion, but I'm unsure it will reopen by then.

Some sites (like TripAdvisor) have named it the best restaurant in the country. And I don't mean just for theme parks.
I'm a little unclear based on the family thing whether I should be recommending intimate romantic places or ones that are good for groups.
The BOATHOUSE at Disney Springs seems like a possible option. It's upscale but not wildly expensive. If they like Asian food, Morimoto's is the Iron Chef's place. Paddlefish is a boat named Lillian Disney, Walt's wife. It's upscale and fun since it's out on the water.
