You now book 60 days before your visit rather than 180 days.
So, you'll want to be awake and checking the app at 6 am 60 days before your visit. Alexa tells me that's October 1st, although it might be September 30th.
Booking Space 220 won't be easy. We canceled a trip in January due to the outbreak. However, we had tried for Space 220 at 60 days and had no luck. IIRC, PFM's wife did snag a reservation.
The pro tip here is to try for a later day of your trip. If you're staying for seven days, you can book all of them when your 60-day window opens, making it the equivalent of 66 days.
The dining experience I recommend to you and any movie lover is Sci-Fi Dine-In Theater at Disney's Hollywood Studios. It's themed like an indoor drive-in movie theater.
At Magic Kingdom, Be Our Guest possesses the best theming, but it ain't cheap. Skipper Canteen ties into Jungle Cruise's theming and is also a great place for foodies.
If your date loves Disney Princesses and/or showy experiences, Cinderella's Royal Table allows you to dine inside the castle. Plus, you meet Disney Princesses. At least, you should be able to do that by November.
EPCOT's San Angel Inn features the best theming after Space 220. Meanwhile, Teppan Edo serves a good teppanyaki meal, although that may not be special enough for you, given that you likely have three good ones within 10 blocks of you. Kim looooves Rose & Crown Dining Room, which serves an authentic British meal.
The best place at Disney's Animal Kingdom is Yak & Yeti. If you may go there, sign up for Landry's Select online and list your birthday as November, even if it's not. You'll pay $25 to sign up, but you'll also get a $25 credit immediately. Then, you'll get another $25 for your birthday month. So, that's $50 toward a November meal in exchange for $25 right now.
At Disney Springs, I can recommend many places, but my favorite is The BOATHOUSE. Art Smith's Homecomin' is also well-loved...and a tough place to snag a reservation.
The California Grill thing is nice, but I'd just suggest a meal there instead. 'Ohana at the Polynesian is also a wildly popular meal.
The best Quick Service (i.e. counter service/fast food places) are: Woody's Lunch Box, Casey's Corner, Columbia Harbour House, Regal Eagle Smokehouse, Sa'tuli Canteen, ABC Comissary, and Flame Tree BBQ.
