years ago - flavorful, but I much prefer fluffy. start off like making an omelette, pushing in from the sides and let liquid run to edges a couple of

times, not overworking.

if I want something somewhere in the middle, good on toast especially because they stay together nicely, I’ll do a folded/Australian version. lots of videos of that.
