Much like The Expanse, Sandman has the creator as a driver of the show. I don't think that was true with Halo, at least not in the same sense.
But it means that any liberties taken are more likely to work in tandem with the rest of the arrangement, more likely to come together as a pleasing deviation.
For example: Amos Burton. Totally different from how he's described in the books, at least visually (but also, in some ways, character-wise). And introducing Avasarala earlier helped make the story more cohesive.
And obviously they couldn't make all of the Belters look like Belters should, so they found other ways to emphasize the differences. In the whole series, I think only three or so Belters looked like actual Belter descriptions.
Left to their own devices, showrunners might have gone totally Doug Jones on the whole thing - which would've been great, but might've made it harder for viewers to connect with the story.
