because.. those are the rules :)
your wallet is just an number and a private numerical key. when you make a transaction, you have a source wallet, a destination wallet, the amount transferred, the amount left over, and the wallet where you want the change stored. that's just how transactions happen a the basic level.
software can do that for you, but knowing exactly where your bitcoins are is important in practice because you don't just have your one wallet.
