Southwest mouthpieces are saying that the storm impacted them more than they expected and they need some time to get their planes and crews back into position.
Pilots and other staff are saying that the systems that manage the crew assignments are horribly outdated. Combined with cost-cutting (staff shortages), this was foreseeable and won't be easily fixed. There's also a possibility that some flight crews have hit their ceiling for flight hours this year.
No one seems to be able to provide a reliable estimate of when it will be corrected or what steps actually need to happen. They are simply saying that the cancellations are necessary to allow the system to reset. That might make sense for a day, two at the max. A week of this defies reasonable belief in that explanation.
