If you both are Catholic and raising the child in the Catholic faith, then the Godparents should be, as you said, Catholics in good standing

But, for a LOT of people, Godparents are more a "if anything happens to me, I want you to look after the kids" thing than a "teach my kid how to be a good [insert religion here].
I am a "God" parent to my best friend's kids. If anything happens to him and his wife, he wants me to take care of his kids. Religion isn't involved in it, as I'm an athiest. He's a thiest, but isn't part of any church.
