once a month we have a rack of NZ lamb, when we have guests a roasted leg o' is routine. fun fact....

NZ racks and american are very different and need different roasting method

NZ are very young (have a seat right over there perv) whereas american racks are much bigger not quite pork roast size

NZ can be hot roasted like a steak, but american needs lower and slower
