Quantifying this stuff isn't as challenging as people would have you believe.
Services use metrics like new subscribers and churn in combination with seconds/minutes/hours watched.
You picked Extraction 2 as an example. It's probably going to be one of Netflix's most viewed projects ever, likely top 10 original movies ever. They've happily paid $200 million for other titles in hopes of luring that many viewers. So, they'd quantify this one as a steal. Netflix even pointed out that Extraction 2 performed so well that it enticed people to rewatch the original, which was the second most watched Netflix movie of the week.
Disney's the more complicated one since it has to quantify how the film/series impacts merchandising and park behaviors. Most Marvel/Star Wars characters from series appear at the parks for a limited time while their programs air. In fact, The Little Mermaid meet-and-greet at Hollywood Studios just ended this morning.
