Teams and coaches prevented guys from trying to play both ways. Lots of guys grow up and go through HS playing a position and pitching.

But when they get to college or the minor leagues they're pretty much forced to choose between pitching or hitting/fielding.
I played SS/3rd and pitched right until I got to college. There I was told I was pitcher and I no longer needed to concern myself with hitting as much. I didn't have a choice. The choice was made for me.
