I think part of it at least for us was that my mom was a terrible cook and would serve veggies in the worst form, like microwaved broccoli and -- (edited)

Canned string beans.
Canned/frozen veggies have gotten much better and I think people are less likely now to just microwave some mush and call it a meal. Not judging really in that last part for most folks, you do your best, but my mom was a stay at home mom.... She had the time to cook.
