Just for fun, I used Cronometer to create one day of food that gives me most of the nutrients I need.

I don't like cooking, so this is a bunch of stuff that would be as convenient as possible, without a lot of processed food. (I ended up having to include a processed breakfast cereal and store-bought bread; there was just no other way.) (My dinner will seem spartan, but I've come to think of myself as "girl dinner" all the way. I find eating itself to be almost as much of a chore as cooking.)

And of course I also need a lot of sunshine every day for that vitamin D.

Here's the best I could do:

Breakfast

Special K Protein, a cup of skim milk or fortified soy milk
Medium apple
1 hard-boiled egg

Lunch

Lentil soup (this I can make, I have a crock pot)
Single-serving container of yogurt
Nuts, seeds, dried fruit (my choices were 8 pecan halves, 5 prunes, 10 peanuts, 4 Tb sunflower seeds)

Dinner

Steamed broccoli
Half can of sardines on wheat toast
Carrot sticks and raw snow peas with hummus


(Needless to say, this is NOT what my dude wants to eat, but then, he does the cooking.)
