Cooking people. Maybe dumb question, but what kind of cheese would you use in a ground meat empanada? I love On the Border empanadas

and obviously won't be able to match them, but what kind of cheese would go in something like that? Mont. Jack? It's basically similar to taco seasoning but I usually use cheddar for tacos and don't feel cheddar would work for an empanada.
