That's a packed itinerary, and you're barely leaving any time to see the cities.

How are you planning to get around? Will you hire a car in each city or will you be taking transit or organised tours?
Either way, Phillip Island is around 2 hours from Melbourne (one-way), and the Twelve Apostles is the same distance in the other direction. Same with your excurions from Brisbane. I wouldn't suggest doing back to back days when you're in the car/train for four hours.
I'd suggest skipping Byron Bay (though I've never been) instead of staying in Brisbane, locate north on the Sunshine Coast. There are loads of beaches there (which is what you'd be seeing at Byron), and it's convenient for Australia Zoo.
I'd also skip the Southern Highlands - you won't see anything better than at the Blue Mountains - and look at staying in Sydney for an extra day. If you still want to see bushland, Ku Ring Gai Chase Nat'l Park is a lot closer.
Going to Uluru and Kings Canyon involves early morning starts so you can see them before the sun gets too high, so build that into your planning especially as you'll be there at the warmest time of the year. This is the part of the trip that you'll have to plan most carefully, but I would try and add an additional day in Central Australia, if you can. It's a magical place.
