Organized tours make it easier though I am a veteran of packing in too much in too short a time. (More inside)

If you’re looking at tours in Cairns, see if you can go on one that includes Aboriginal culture.
There are a lot of nature/hiking options close to the cities. Actually if you want to see a zoo, I’d suggest Healesville outside of Melbourne. It’s all Australian animals and there are lots of trails in the area.
When I went to Central Australia it was part of an organized tour that went for five days and involved camping outside. They had a bunch of different options and I would suggest that as an option. I’ve linked the tour provider I went with.
