Fundamentally it's about how you express or experience love.
So one person's "love language" may be positive affirmations, while another's may be acts of service. One of the issues in relationships is when there are mixed signals between them. Where someone says "I don't feel like you care about me, you never say it." and the response is "But look at all the things I do for you"
Beyond that it has come to just mean things that really speak to people and stuff they value. For example when someone says "Man, sitting down with a good book and a glass of wine is really my love language" That type of thing.
