There's your problem, you're using an incorrect definition!

Processed means that you're changing it from its original state.
Buying chopped coleslaw mix = processed. Canned vegetables = processed.
But obviously, some foods are processed more heavily than others. Ham goes through multiple processes - salting/brining, cooking/curing, slicing - before it gets to the customer.
So does cheese - fermenting the milk, curdling it, separating the curds and washing them, forming it into blocks, salting it, continually draining it, putting it into molds, aging it, cutting it into smaller blocks, etc... All of these are processes.
