there is no plot - that's the beauty and messiness of a protest movement like this. everyone organizes and protests as they feel convicted to.

but to your point, there is only so much standing around with signs that can be done or be effective. you either move on to different organizing via mutual aid or policy pushes, or you start moving into direct action.
we saw that in 2020 - lots of marches plus direct action, and in the end, we got few direct results. but the longer term effects of keeping cops out all night and flat-footed, starting fires, destroying police property is what we see now - there is a decline in public trust of cops, they're refusing to do their jobs and daring the public to cut their budgets. they've become unreliable, the job has become toxic to many who might have joined before.
protesting a genocide is worth escalating the fight. so some food got ruined. i'm guessing their point is that a lot of food meant for Gaza is going to waste, being seized and destroyed, and the US just stands by and lets it happen. we cannot pretend for an instant that the US could immediately halt what's happening and force a change in course.
and we're starting to see action happening - large-scale divestment of Israeli linked companies is underway across pension funds in Canada. other countries are starting to follow. that's a win and it wouldn't have happened with out the general public showing they care about this issue, to the point of putting themselves in harms way to protest.
