That seems to be the best way when using an oven. I'm also seeing people throw it in the broiler at the end to get some nice char. -- nm*

Am test kitchen, boil 30 min, bake on a rack topped baking sheet, spread lapsing suchong tea under which will transfer some smokiness -- nm
