I love that every new restaurant has a visionary "executive chef" behind it. Is this a recent development, or has this always been the case?

The nicer restaurants, I guess. But now it's pubs. I guess the "gastropub" movement is still in full swing. -- nm

It goes back farther than that. The franchising of chefs has been going on for a while, at least to the rise of Wolfgang Puck. -- nm
