In Florence, Il Parione and Boccanegra both had great Florentine steak and pasta. Acquacotta is a bit off the beaten path with good pasta and

ZaZa, which is a bit more touristy was still really good. In Rome the place we ate multiple times was Tratorria de Pietro al Pantheon. It is right near the Pantheon with a strip of restaurants all around it, but it's the least assuming one without people hawking for you to come in. The truffle spaghetti is amazing, but so were the other pastas. Also for lunch, All Antico Vinaio is really great. Lines are insane (and there are now outlets in New York, Las Vegas and I think LA, but it's really good).
