A few thoughts on all of the above (and I really hope you guys come here). On the pizzas, those are all different styles of pizza (we have many here)

There is a strong argument that the true "Chicago style" pizza is tavern style (thin, crispy crust cut into squares). The local tv food guy (literally goes by the "The Food Guy") wrote a book about Chicago's different styles of pizza and he does pizza tours to take you to try the different kinds. I've heard it's great and might be fun if you all come in. Hugo's is really good (though pricey), but I think Joe's is the best seafood (and actually steak) in the city (though it's even pricier). Frontera grill is extremely hard to get into. They don't (or at least they didn't used to pre-covid) take reservations, so people started lining up about 4. They do have a finer dining restaurant that does take reservations called Topolobompo, but he has a really good lunch place called XOCO which can be a good compromise and there are actually Frontera Grill places at O'Hare that have great sandwiches (I love their breakfast sandwiches).
