an old Intel NUC "mini PC" from work that we were discarding (you can also find these on ebay but any PC would work) running Linux using that same SSD from my Pi days.

I went the docker route so I run everything in containers. I felt it was a bit easier to deal with than proxmox but that's also a good choice with more flexibility (vm, docker, etc.)
