You'd think the one week of the year where nearly everyone eats or makes turkey they'd be open every day leading to the holiday.

I have no idea how the business works or is run but it seems quite odd to be closed so close to Thanksgiving. And as you mentioned, people need to brine the bird so they need to have them a few days before.
Very strange to me.
