LIR Redmond - I usually buy two regular bell peppers and chop 'em up. Doesn't matter what color, but I think the orange and yellow ones are sweeter

and it adds more color to the dish - which already has the tri-colored rotini and the red tomatoes.

(You can add other stuff if you want, too - my mother likes putting raw broccoli and sliced carrots in hers - I like it with just the tomatoes and peppers.)
