Yes, they do. But if people stopped eating meat, they'd require a LOT more veggies and grains. Maybe not as much as

we're currently feeding livestock, but we wouldn't be eating the same type of food given to livestock, either. We'd be eating lettuces, and rices, and squashes and melons. All or most of which would have a much lower yield per acre than the food used for animals.
That means more acreage under the plow.
So I don't think everyone going vegetarian would reduce the impact of farming by all that much. Especially if you consider that we'd still need dairy cows and still need sheep for wool. And possibly chickens for eggs.
