It cooks very quickly, like 10 minutes at 350 for a 1/2 inch filet. Most are thinner than that.

If you were rolling it up and the fish was thawed, I would have gone maybe 15 minutes, max. Unfortunately some of the info below is wrong, flounder is one of the least "fatty" fish you can buy. It's similar to cod and tialipia in "make up". I think it has a better flavor though. I've had an awesome flounder filet rolled up with gorgonzola, pesto and pine nuts. It was to die for.
