flying on wednesdays in the evenings? or any day early morning?

are there certain days when it's cheaper? and is it true that you can get dirt cheap flights if you just show up and hang out at the counter, and tell them you want a flight if there are any cancellations / is it true that last minute bookings can get you in cheap if there are seats available and the airline just wants warm bodies on the plane to fill seats?
