Yeah, but remember, you're adding the same amount of water (plus sugar) to the mix halfway through.

It's still a strong liqueur but it's diluted.

I think you need that strong alcohol to get the flavor/color out of the peels. I just took the lemon peels out of the bottom of the container and they were like potato chips, so dry and crispy.

(Will also says he'd never waste the Everclear doing something silly like taking paint off wood.) :p
