Legacy is a lot more than populism. It's populism + influence.

If it was all populism, why have we heard of The Velvet Underground?
I don't think anyone disputes that The Beatles were in the right place at the right time. But that's not the point. That *in no way* diminishes the fact that they had the ability to innovate beyond their initial flash in the pan. If their plane crashed right after the Ed Sullivan Show, they're The Dave Clark Five or Buddy Holly, and not The Motherfuckin' Beatles, but it didn't and they went on to make The White Album and Sgt. Pepper, and then everyone tried to do the same thing as them. They *became* the model.
It's the same for Star Wars, in that he had a follow-up and an ability to No one's going to be following Twilight to any success.
To put it another way: you've rightly brought up the fact that Twilight rips off Joss Whedon. Who are The Beatles (or Star Wars') Joss Whedon?
