If the perp planned just to beat the guy up, but then in the heat of the moment pulled out a knife and stabbed the victim, that is still manslaughter.
"Murder" requires at least some premeditation -- some advance planning or thought to killing someone. But manslaughter occurs when someone kills another person under some emotionally heightened circumstances: a bar fight, finding your spouse in bed with someone else, a street brawl, etc.
