That makes no difference. The fish markets are closed over the weekend, so on Mondays the restaurants will offer a fish soup or sushi special to get

tsk tsk, somebody hasn't been reading their Bourdain. Do yourself a favor and ask for "Kitchen Confidential" (book or audio book) for Christmas or check it out at the library. The style is easygoing, hilarious, profane, and you learn a hell of a lot about starting as a baby cook and working your way up to Executive Chef.
