What they usually do on the chef shows (and I've done myself) is wash your hands well, put the butter in a bowl and squish it all around, through your
|
fingers, etc, until it's workable. This way it's still fairly cold (yay! that's what you want) but not melted--Using a microwave or hot water will always melt some of it.
