Eye of round, top round--both are nice cuts of meat but have to be marinated and cooked a good while so they won't be tough.

If you want to really make an impression, get a ribeye roll. One that serves 8 runs about 28-30 bucks here in town (we also have several large beef feedlots so inorganic, non grass fed beef is cheap).

Remember the meat is the star of the dinner, but it has to have a supporting cast. google up: yorkshire pudding + gordon ramsay and you'll get a WOW recipe that's simple but impressive to go with.
