1. No. They are face down and you cannot peek. Certain cards like Azelf will allow you to peak. 2. No. Each pokemon can only evolve once per turn

but you can evolve more than one pokemon per turn and some cards, like the Broken Time-Space stadium can allow you to evolve the same pokemon more than once.
