"what equipment do you use" is a required question. If they balk at that question, walk away.
They should have books of previous work available to you, digital or online is not acceptable. You want to see real photographs, so you can see the final quality of work.
If you have a large wedding, with many photo's, ask if the photographer is bringing an assistant. the photographer should have multiple camera's, the assistant reloads so there is no down-time.
How many hours do you get? How many total *shots* do you get. This is important if they use film.
