I've cut way back on the amount of meat in my meals, and increased rice and whole wheat pasta. I can see adding quinoa to this rotation.

I bought a package of Costco's wonderful boneless pork chops this week and realised they weight about 10oz a piece - each one will do me two meals and there were 9 in the package! And I had a $4 coupon, so they'll cost a little over 60 cents a meal :) Food *doesn't* have to be expensive.
