I love the flower and herb blends made into sorbets, rather than icecream. I've had nasturtium, a lovely lavender and vanilla, violet, and rosepetal

They were all quite good with the exception of the rose. It was ok, but they didn't puree the petals down enough and something about the texture made me gag.

There are several herbal sorbet recipes that are to die for. They're mostly made in a lime juice and simple syrup (1/2 water, 1/2 sugar, boiled for a few minuetes until it coats a spoon). Anyway, mix fresh squeezed lime juice, maybe a cup of the syrup, then mix in thyme and cammomile, or basil and oregano, chervil and marjoram, cilantro and finely chopped chili peppers, rosemary and parsley and sage and thyme, and don't forget mint--it can be added to almost anything including the flower mixes or stand on its own.

One you master those, go add different stuff together and try it. If you come up with something awful, just toss it--it's not like you spent a lot of money for ingredients like you would for ice cream. :)
