really.
heat the oil, add some garlic or onion. saute a few minutes. add the arborio rice, stir for a few minutes, add a little wine first, if you are using it. then just keep adding stock. don't let the previous liquid complete absorb before adding more. and i always find it needs a little more than the recipe calls for. just keep stirring. add whatever you are adding right at the end.
