right now it's simmering. It doesn't say to stir it during the simmer, but I am *so* tempted to ...

Halving the recipe should be fine, but one risotto secret is to heat the water or stock and add it to the rice 1/2 cup at a time - when it's absorbed

It's also good to stir the rice in the olive oil before you add any liquid, and then (you might want to ignore this advice) adding some white wine -- nm
