Halving the recipe should be fine, but one risotto secret is to heat the water or stock and add it to the rice 1/2 cup at a time - when it's absorbed

- It's also good to stir the rice in the olive oil before you add any liquid, and then (you might want to ignore this advice) adding some white wine -- nm - Roger More Feb 13, 19:07
